5 Ways to Elevate Your Breakfast Using Eggs

Although many know the basic ways to cook a simple scrambled or sunny-side-up egg, here are five eggs-pert ways to raise your breakfast to the next level.

1. Egg-in-a-hole

Ingredients needed for one serving:

  • 1 Egg
  • 1 Slice of bread
  • Butter
  • Salt and Pepper

Steps:

  1. Put a non-stick pan over medium heat
  2. Melt butter in the pan
  3. Cut a 1-1&1/2 inch hole in the center of the slice of bread
  4. Cook until the face-down side of the bread is lightly toasted (around 1-2 minutes)
  5. Flip and crack the egg into the hole
  6. Season with salt and pepper
  7. Continue cooking until the egg is firm
  8. Flip again and cook 1 minute to ensure doneness on both sides
  9. Serve Immediately and enjoy!

2. Avocado Toast with Egg

Ingredients for one serving:

  • 1 Egg
  • 1 Slice of bread
  • 1/2-1 Ripe Avocado (depending on how much you like)
  • Salt and Pepper
  • Olive oil

Steps:

  1. In a nonstick pan, crack one egg and cook to your liking (personally, I like Sunny-side up for avocado toast)
  2. While cooking the egg, toast your bread to your liking as well (I recommend fairly crunchy and toasted)
  3. Slice avocado and spread- ripe avocados have a consistency similar to butter- onto the finished toast
  4. Place cooked egg on top of the avocado toast, drizzle with olive oil, and sprinkle with salt and pepper
  5. Serve hot and Enjoy!

3. French Toast

Ingredients for one serving:

  • Two slices of bread
  • 1-2 Eggs (depending on how eggy you like your french toast)
  • 1-2 teaspoons Cinnamon
  • 1/2 teaspoon Nutmeg and 1-2 tablespoons Sugar
  • 1-2 teaspoons Vanilla extract
  • Powdered Sugar
  • Maple Syrup

Steps:

  1. In a bowl combine cinnamon, nutmeg, and sugar and set aside
  2. Crack eggs in a separate bowl and mix well; combine the bowl of spices with eggs and mix well
  3. Dip bread into the mix, then fry in a non-stick pan until both sides are golden brown
  4. Serve hot with a dusting of powdered sugar and some maple syrup!

4. Frittata

Ingredients for 6 servings:

  • 6-7 large eggs
  • 1/4 cup heavy cream or 1/3 cup of milk
  • Use your favorite omelet ingredients, just try and keep it to around 2 cups total of ingredients, (unless you have something like spinach, in which case you can use more than 2 cups total because it shrinks)
  • 1-1&1/2 cups of cheddar cheese (or whatever cheese you like)
  • Salt and pepper
  • Fresh thyme and garlic
  • Butter or cooking spray (or another oil substitute)

Steps:

  1. In a cast iron skillet, oil your pan and evenly spread out your fillings, (if you have something like bacon cook beforehand, or if you have spinach wilt beforehand, with garlic and thyme in the pan)
  2. In a bowl, mix the eggs evenly and mix with the heavy cream or milk
  3. Pour the egg mixture into the skillet on top of the fillings, making sure the eggs cover the fillings for the most part, put some of the cheese in now
  4. Cook on medium heat until the eggs start to set on the top, place more cheese on top, and then broil in the oven until the top is golden brown)
  5. Slice in 6 pieces like a pie and serve!

5. Huevos Rancheros

Ingredients for 2 servings:

Pico De Gallo

  • 1 Ripe Tomato
  • 2-3 Tablespoons Onion
  • 2 Tablespoons Cilantro
  • 1-2 tablespoons lime juice (1/2-3/4 a medium lime)
  • 1/4 Teaspoon salt

To accompany the Pico De Gallo

  • 2 Corn Tortillas
  • 2 Eggs
  • 1 jar of your favorite Salsa
  • 2 Teaspoons Olive or Vegetable Oil
  • 1/4 cup Monterey Jack Cheese

Steps:

  1. For the Pico de Gallo, dice tomato and onion, chop cilantro and combine with salt and lime juice in a bowl
  2. Put a non-stick pan over medium heat, put half of the oil in the pan and fry one of the corn tortillas until it is golden on both sides, repeat with the other half of the oil and the other corn tortilla
  3. Crack the two eggs in the same skillet and cook sunny-side up
  4. Place the two corn tortillas down, put an egg on each, smear with salsa, top with some pico de gallo, and sprinkle on some cheese, Enjoy!
